Tanya Brown’s Roasted Pork Loin

3 cloves of garlic, tablespoon of rosemary, and salt & pepper mashed and mixed together. Pierce the Pork loin with a knife and put paste in the openings. Rub down the meat with the rest of garlic and olive oil.

Place pork loin in the oven at 275 for 4 hours. Baste with the liquids from the pork through out that time.

Remove roast to a platter. Heat the wine in the pan and stir to loosen browned bits of food on the bottom. Serve with pan juices.
