Lemon-Garlic Dense Bean Salad with Feta

  • ¼ cup extra-virgin olive oil
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 tablespoon red-wine vinegar
  • 2 teaspoons Dijon mustard
  • ½ teaspoon ground pepper
  • 1 small clove garlic, grated
  • ¼ teaspoon salt
  • 2 (15-ounce) cans no-salt-added white beans, such as cannellini or great northern, rinsed
  • 1 cup diagonally sliced celery, plus celery leaves for garnish
  • ½ cup crumbled feta cheese
  • ½ cup unsalted roasted almonds, coarsely chopped
  • ¼ cup coarsely chopped fresh basil, plus more for garnish

Directions

  1. Whisk ¼ cup oil, 1 teaspoon lemon zest, 2 tablespoons lemon juice, 1 tablespoon vinegar, 2 teaspoons mustard, ½ teaspoon pepper, the grated garlic and ¼ teaspoon salt in a large bowl until combined.

  2. Add rinsed beans, 1 cup celery, ½ cup feta, the chopped almonds and ¼ cup basil; toss to coat. Let stand for 5 minutes, tossing occasionally, to allow the beans to absorb the dressing. Garnish with additional basil and/or celery leaves, if desired.
