French Onion Soup
Homemade French Onion Soup was on the menu last night for dinner and it was delish!!!!!
Take 5 large yellow onions (slice thin) and add them to a pot with melted butter. Let these onions reduce down for about 35 min stirring every 5 min. Then add a tablespoon of salt and 1.5 teaspoons of sugar. Mix that in and let them caramelize (about 10 min) add a half of cup of red wine and mix in all the brown bits at the bottom of the pot.
Take 32 oz of Beef Broth (made my own with better than boullion beef) and 24 oz of Chicken Broth (again better than bouillon chicken). Pour in Pot. Add 1 tbsp of worcestershire sauce and stir. Add 2 sprigs of thyme and 1 bay leaf. Let the flavors come together. Add salt and pepper to taste.
Add soup to a bowl that can go in the oven, take a piece of toasted bread or croutons and place on top of soup, and then add swiss cheese and mozzarella cheese on top of croutons and broil till it looks like the pics above.
